The Cirque de Gavarnie and the central Pyrenees
The Cirque de Gavarnie is a natural amphitheatre of 1,500-metre vertical walls crowned by the highest waterfall in Europe at 423 metres. The cuisine of the Midi-Pyrenees is generous and fortifying. The cassoulet of Castelnaudary, a white bean stew with duck confit and sausages, is the stuff of legend. Roquefort, aged in the natural caves of the village that shares its name, is the king of blue cheeses. The black truffle of the Quercy perfumes the winter markets of Lalbenque. The aligot of the Aubrac, a mash of potato and fresh tome cheese stretched to a silky thread, is comfort made dish after a day in the mountains.
